Dairy free and egg free weekly menu plan

Baby has now been  home for three weeks so we are still gladly raiding our stash of freezer meals to help us out when we are too tired or uninspired to cook much ... this week our food will look like this:

Friday: beans on toast, apple crumble and custard

Saturday: beef, veggies and barley from the freezer made into pasties, served with steamed broccoli

Sunday: roasted gammon joint, jacket potatoes, salad

Monday: prawn and corn rosti, sweet potato wedges, salad

Tuesday: beef, veggies and lentils from the freezer, with tacos and salad

Wednesday: veggie burgers from the freezer, home made bread rolls, potato wedges and salad

Thursday: breaded fish from the freezer, jacket potatoes, peas

What we cooked today

Today we cooked:
1) more granola
2) more pizza sauce
3) a kilo of ham, for lunch sandwiches ... and pizzas
4) nice salads
5) dairy free pizzas!

What we cooked today

Today we made:
1) beef and veggie pies - using leftover roast beef
2) chocolate chip cookies - we had guests for afternoon tea
3) chocolate cupcakes - decorated by the boys - why use just one dolly mixture when you could use ten?

Dairy free and egg free menu plan

Friday - roast chicken, roast potatoes, roast sweet potatoes, steamed cabbage and carrots, gravy, home made sage and onion stuffing 

Saturday - chicken, bacon and leek pie with mashed potatoes and peas

Sunday - chicken stir fry - garlic, ginger, spring onions, courgette, red pepper, carrots with leftover chicken and rice noodles

Monday - last of the chicken made into chicken and sweet potato soup, served with home made oat bread

Tuesday - sausage, ratatouille and chickpea bake with crispy breadcrumb topping 

Wednesday - sausage pizza with salad

Thursday - beef and lentil bolognese from the freezer

What we cooked today

Jam tarts! Plus a super fast pasta supper made with quick-cook fusilli (5 mins) and fried bacon, courgette, red pepper, celery, carrot, onion and garlic stirred into a bit of spare stash of home made pizza sauce from the freezer ...

Treats of the week

Batch cooking muffins with the boys here.  We made chocolate chip and banana and a new one, raspberry and orange ... made using frozen berries.  Both varieties were pretty tasty.

Dairy free and egg free menu plan

Bit of a frugal one this week, I do like to set myself a challenge: 

Friday - Home made salmon fish cakes from the freezer with potato wedges and salad 

Saturday - Roast beef, roast potatoes, roast sweet potatoes, steamed carrots, cabbage, broccoli and gravy

Sunday - as above, make double the amount of veggies on Saturday, slice the beef, add to plates and microwave today 

Monday - trying to stretch a nice packet of bacon: meal 1: bacon, courgette, red pepper pasta

Tuesday - trying to stretch a nice packet of bacon: meal 2: bacon, veggie and paprika rice 

Wednesday - trying to stretch a nice packet of bacon: meal 3: bacon, broccoli, leek and pea pasta 

Thursday - trying to stretch a nice packet of bacon: meal 4: bacon and veggie pizza with potato wedges and salad

All in one sausage and veggie bake

Not really a recipe, I just chucked a packet of sausages into a baking dish with chopped potato, sweet potato, onions, carrots and baked for 40 minutes in a hot oven, turning once.  Five minutes from the end of cooking time we added some frozen peas.

The best vegan scones ever

... well I think so anyway.  My recent efforts at making light and tasty scones have been pretty ropey so I was delighted to find the recipe from this book.  It really works, they were just as scones should be.  I'll be using this recipe again.  We ate our scones with some home made butternut soup.

Ham, lentil and veggie soup



I had about 150g of a gammon joint left so I chopped this up and added it to some chopped onion, carrot, celery, sweet potatoes and 100g of lentils.  I sautéed and then added about 1.5 litres of chicken stock, from a cube.

Treat of the week






The husband cooked me a 'welcome home from hospital' cake, a vegan victoria sponge, and then he and the boys iced it.  The cake tasted amazing and it felt so good to be home.

Monday - bacon, courgette and tomato pasta bake with crispy crumb topping 

Tuesday - savoury mince beef and veggie pie with steamed savoy cabbage 

Wednesday- bacon and red pepper pizza with salad 

Thursday - breaded fish, sweet potato wedges, peas
