The recipe made 45 ... they should have lasted for ages and I had high hopes of stashing some in the freezer but nope ... eaten in one day.

Dairy free and egg free fairy cakes for birthday parties
We take our own cakes to birthday parties ... recent versions have included adding jelly babies and Octonauts rice paper toppers to the basic iced fairy cake ... the ones below were dairy, egg and gluten free so that Grandma could share them as well.

The continuing saga of finding a soy cheese that is acceptable to The Allergic One
Over the past couple of years I've spent considerable time, effort and money pursuing what I had thought was a fruitless search for a soy cheese that The Allergic One likes. They all seem rather, er, odd to my taste buds and we have thrown out so many. I have settled for a long time with Tofutti cheddar style slices but The Allergic One often questioned why the cheese served with his spag bol was torn rather than grated. At long last I am happy to report that he is officially more than partial to Tesco's own brand soy cheese ... it is now a regular feature at family meal times and The Allergic One is able to use the long coveted 'wooden-box-grater-thingy', just like his brother.

Tuesday - Hedgehog meatballs, sweet potato mash and broccoli
Wednesday - Chicken hotpot
Thursday - Brown rice sausage rolls, jacket potatoes, salads
Friday - Slow cooker spag bol
Saturday - leftover spag bol with jacket potatoes and salad
Sunday - BBQ burgers and salads

Dairy free and egg free chocolate loaf cake
This is lush! Perhaps the best ever vegan chocolate cake? Would be great for picnics or as a summer dessert served with ice cream and fresh berries.
Makes 2 loaf cakes, line loaf tins
Mix 300g plain flour, 100g cocoa, 1 tsp baking powder, 1 tsp bicarb, 150g dairy free marg, 150g sugar, 250g golden syrup and 300 ml just boiled water
Bake for 35 minutes or until skewer comes out clean at 170 degrees fan oven
