Winter warmer: beef and black eyed bean chilli

Brrrrr ... -7 yesterday morning as I got in the car ... very beautiful though:

This weather calls for something warming and comforting ... beef and black eyed bean chilli ... one for the kidney bean haters.  Served with avocado, rice, tacos, salsa, soy cheese as well as yes, predictably, a completely bean-less chilli for those with an aversion to any and every variety of bean.

Treat of the week

This recipe for Ginger Fairings was very well received ... as I baked, the house was filled with a warm, Christmassy scent owing to the spices used.  The boys polished these off in no time.  I'll make these again.

Dairy free and egg free chocolate cake for Christmas

The Food Allergy Mama has a new book coming out here.  This recipe is taken from the book.  The recipe has worked nicely for me as a dairy free and egg free alternative to a chocolate yule log ... obviously not looking remotely like said yule log but fulfilling the chocolatey and seasonal criteria.   Holly and berry sprinkles were from Waitrose.  Cake served with Swedish Glace.

Lamb, veggies and rosemary dumplings

This dish was based on a 'lamb ragout' recipe by Lesley Waters in her book, 'Healthy Food'.

I dusted 350g chunked lamb neck fillet in seasoned flour, browned in olive oil and then removed from the pan.  Next I added a chopped onion, diced sweet potato, 4 diced carrots and 2 diced parsnips.  Then I chucked the lamb in with 2 tbsp of sundried tomato puree and 750 ml of veggie stock.  Simmer for 40 mins.

Next make dumplings: mix plain flour, baking powder, olive oil, chopped fresh rosemary, unsweetened soy milk.  Divide mixture into 16, shape into balls.  Add into the casserole, add lid, cook for 10 minutes.

Thicken casserole with cornflour if necessary.  Add a handful or two of frozen peas at the end.  Serve with dollops of mash.

Weekend lunch

I had some leftover sausages to use up which became ... ta da ... sausage and sweetcorn pizza ... loved by both boys.  Served with a bit of crunchy salad.  Sausages look a little burnt in the photo ... they were not in real life!  I'm trying to get used to photographing our food in the winter in artificial light ...

Treat of the week

One for the Australians ... looks like a Tim Tam, tastes like a Tim Tam ... but it's dairy free and egg free ... called 'Choculence', from the brand 'Leda'.
